Nontrebbio 2021 is the result of spontaneous cofermentation of beer wort and fresh Trebbio grapes by Cantina Errante, a Tuscan wild ale specialist. The base beer was brewed using turbid mashing and organic local barley, then aged in oak alongside the grapes. A single 2000-litre batch yielded five distinct fruity variants through different fermentation approaches. This hazy, vinous wild ale delivers white grape, grapeskin and rustic funk aromas. Pure spontaneous fermentation—without added bacteria or brett—creates an authentic, earthy character with restrained acidity and a distinctly wine-like presence.
