This beer's distinctive red-brown colour and subtle tartness come from extended maturation in massive oak foeders—a technique rooted in historic London porter brewing. The palate blends toasted malt with tart cherry and dark berry fruit, complemented by a wine-like character. Mixed fermentation with wild yeast and bacteria creates refined acidity without harshness.
