Gueuzerie Tilquin, founded in 2009 by Pierre Tilquin in Rebecq, operates as a blendery and producer of spontaneously fermented beers. The Mûre-Rullquin is a sour fruit lambic made from the fermentation of 260 grams of blackberries per liter in a blend of aged lambics. The result is a complex beer marked by sharp acidity, fruity aromatics, and the characteristic wild yeast and oak character of traditional lambic production. The nose presents dark fruit aromas with hints of barnyard funk and woody notes. On the palate, blackberries lead with citric sourness and green apple character, supported by the typical Brettanomyces notes of spontaneous fermentation. The finish is dry and lingering, with pleasant tannic texture that makes the beer elegant and approachable despite its intensity.
