Since 2009, Brouwerij Hof ten Dormaal has brewed on a 12th-century farm in Tildonk, Flanders. This Saison is a true farmhouse ale built from the family's own grains and hops—the Janssens grow, malt, brew and bottle everything on-site. The beer blends barley, wheat, spelt and rye into a hazy, golden pour with a full white head. The nose carries moderate lemon and lime with restrained spice. On the palate, tart notes emerge upfront, followed by a dry, prickly finish with gentle warmth. Medium to high carbonation gives the beer its crisp, lively character. An honest farmhouse ale without pretense—brewed with passion and made entirely from ingredients grown in the surrounding fields.
