Wild Borders is a fruit lambic from Het Boerenerf Eylenbosch, Senne Eylenbosch's new blendery in Huizingen, Belgium. This young brewing family revives a tradition that ceased in 1964: spontaneously fermented lambic with local fruit. Wild Borders emerged from a single 2000-litre base batch, yielding five distinct fruit variants. At 7% ABV, this lambic embraces traditional spontaneous fermentation with thoughtful fruit selection. The result balances tartness with fruit character, displaying a medium body and soft carbonation. Senne's venture transformed a family farm into a contemporary hub for wild fermentation and blending craft.
