The One is the first beer Valery and Paula brewed together when they met in Brazil. This amber-hued Saison is fermented with Brettanomyces Bruxellensis and Lambicus, lending funky, complex yeast character. Hopped with Hallertau Blanc and aged on Pinot Grigio white wine barrels, this 6.5% farmhouse ale balances spicy, floral and fruity notes with a dry, lingering finish typical of the style. The result drinks smoothly despite its strength. Brasserie Atrium itself carries deep roots: founded in 1931 within a Cistercian Art Deco abbey in Marche-en-Famenne, Wallonia, the brewery reflects a passion for craft and storytelling. The One embodies that heritage.
