Cantina Errante, a small Tuscan producer, explores spontaneous fermentation and regional ingredients. Primavera 2020 is a wild ale where fresh lemon balm, rosemary and wild mint take centre stage. The beer develops through spontaneous fermentation via coolship exposure, followed by 15 months of maturation in oak barrels. The base uses Italian organic barley malt and Tuscan wheat from evolutionary populations, combined with aged organic hops. The result is a complex beer with citrus notes, gentle acidity and herbal spice from the foraged botanicals. Extended barrel aging adds character and depth.
