The High Council for Artisanal Lambic Beers, known as HORAL, is a Belgian non-profit association dedicated to protecting and promoting the traditional lambic brewing culture of the Pajottenland and Zenne Valley region. Rooted in one of the world's most distinctive brewing traditions, HORAL unites the producers of Oude Geuze and other spontaneously fermented lambic beers, safeguarding centuries-old methods of wild fermentation and barrel ageing that are unique to this specific geographic area in and around Brussels. HORAL's member breweries and blenderies collectively represent the full spectrum of traditional lambic production, from the spontaneous fermentation of raw wheat and malted barley wort, to the patient blending of aged lambics into Oude Geuze and Oude Kriek. Members have included renowned producers such as Gueuzerie Tilquin — the first HORAL member located outside Flanders — as well as Lambiek Fabriek from Sint-Pieters-Leeuw and Kestemont Brewery from Dilbeek, reflecting the council's ongoing commitment to welcoming quality-driven artisanal producers. HORAL has also played a role in the broader recognition of Belgian beer culture, contributing to its UNESCO Intangible Cultural Heritage status. The council stands as a guardian of lambic's identity, ensuring that Oude Geuze and related styles continue to be brewed according to authentic, time-honoured traditions.
