Brouwerij De Moersleutel, the Alkmaar-based craft brewery founded by four brothers, created Pastry Factory: Coconut Coffee as a bold statement in barleywine brewing. The beer combines anaerobically fermented Ethiopian coffee beans with toasted coconut, anchored by a malt bill of barley, rye, wheat and spelt.
The nose presents coffee and coconut with surprising hints of blueberry and raspberry from the fermentation process. On the palate, caramel sweetness emerges alongside coffee depth and generous coconut character. The finish is warm and lingering, with the 10% ABV providing a gentle warming sensation that complements rather than overwhelms the layered flavours.
