Het Boerenerf Eylenbosch Oude Gueuze is a spontaneously fermented blend of young and mature lambics from the Senne Valley. Senne Eylenbosch established this blendery in 2020, sourcing wort from five lambic breweries including 3 Fonteinen, De Troch, and Lindemans. After several years of aging in wooden casks, the result is a dry, layered gueuze with a 93% fermentation degree. This unfiltered, non-pasteurized gueuze balances tartness with substantial body. The blend reveals itself through vinous notes, red berries, and citrus zest, complemented by the subtle funkiness of wild yeast fermentation. At 5.8% ABV, it pairs beautifully with aged cheese and cured meats, embodying the traditional character of classic Senne Valley gueuze.
