Tears of Saint Laurent from Wild Creatures is a spontaneously fermented ale brewed in Mikulov, Moravia, built around Saint Laurent grapes. The Czech brewery, established in 2011, pioneered spontaneous fermentation in their country, cooling wort in open vats where local microflora naturally colonises the beer. The result is a deep crimson ale with vinous character: plum, sour cherry and dark fruit notes from both the grapes and wild fermentation.

Years of oak ageing develop wine-like softness and complexity, with little bitterness—a contemplative beer born among the vineyards.
