Wild Beer Modus Operandi
Modus Operandi is Wild Beer Co's flagship and the very first beer the Somerset brewery ever made. This English Old Ale undergoes a distinctive transformation: after more than 90 days of maturation, it is aged in bourbon and red wine barrels where wild yeasts and bacteria work their magic. The result is a dark, layered beer with sweet fruit cake, cherry and oak character.
The blend marries rich, mature batches with more acidic variants, creating harmony between vanilla and berry, sweetness and tartness. At 7% ABV with a full, smooth body, this beer drinks more like a refined wine than a traditional ale—a fitting tribute to a brewery built on wild fermentation.
