Sisters Honeycomb
Sisters Honeycomb is a dark, complex Dunkelweizen from The Sisters Brewery in Breukelen. This robust beer (8.1% ABV) is a double mash of their Pchela, matured for six months in oak barrels previously used for ten years of Rutte Oude Jenever aging. The extended oak contact lends it a deep black colour and layered character.
Expect a silky mouthfeel with notes of chocolate, coffee and roasted grain dominating the palate. The barrel maturation amplifies the roasted character throughout. The Sisters Brewery, run by two sisters and their father, draws its naming inspiration from their surname Beijeman—beekeeper in Dutch—a thread woven through their entire beer portfolio.
