Rochefort 8 is a dark Trappist ale from the Abbey of Rochefort in Belgium, where brewing has taken place since 1595. Developed in the 1950s and originally called 'Spécial', the name references its original gravity measured in Belgian degrees.

The beer presents a dark brown hue with reddish undertones. On the nose, dried fruits dominate—raisins and dates lead, followed by banana, toffee, and notes of bread. The palate is layered and rich: caramel malts, brown sugar, and dark fruit form the foundation, with subtle spice and a gentle peppery edge. The finish carries warmth and lingering sweetness.

At 9.2% ABV, Rochefort 8 achieves a full, rounded mouthfeel that remains graceful despite its strength. A contemplative beer, best savoured slowly.
