Brouwerij Emelisse in Goes has built a reputation since 2005 for experimental barrel-aged beers with complex, layered flavours. This White Label TIPA Cognac BA from 2021 is an amber-red Triple IPA at 11.8% ABV, matured in cognac casks. The beer marries the robust hop bitterness of a TIPA with warm spirit notes and fruit-forward character from barrel aging.

The nose presents citrus and hop bitterness, followed by grainy and herbal tones. On the palate, robust hop bitterness and rich grain are joined by pine and sharp citrus. The finish is dry and lingering, with warming alcohol that makes it well-suited to spiced meat dishes.
