Brooklyn Sorachi Ace is a Saison from Brooklyn Brewery built around the distinctive Japanese Sorachi Ace hop, developed in the Sorachi region of Hokkaido in the late 1970s. Originally overlooked by major brewers, this hop variety has found a home in Brooklyn's approachable yet characterful ale.

The grist is German two-row Pilsner malt with Belgian candi sugar, fermented using a special Belgian ale yeast strain. Sorachi Ace hops are added both during the boil and post-fermentation, creating a distinctive citrus and spice profile. The beer drinks smooth and effervescent with a dry finish and subtle earthy undertones.

On the nose, bright citrus and grapefruit with hints of grass and tropical notes. The palate follows with citric tang, light grain sweetness, and a mild, layered bitterness. No aggressive hop bite—instead a complex, lingering finish that rewards a slow pour.
