Roxy Bourbon from Penyllan Brewery is a 12% ABV Old Ale brewed with Trappist yeast and aged in used bourbon casks. This 2015 vintage is a blend of strong Trappist ale and tart fermentation, where the bourbon character integrates gently.

The beer presents dark red and clear in the glass. The nose reveals mature aromas of dark chocolate, leather, intense raisins and aged plums, combined with roasty notes and light liquorice. Bourbon emerges subtly as vanilla and warming alcohol.

On the palate, ripe dark fruit and roasted chocolate characters dominate, with mild bourbon adding vanilla and wood notes. A gentle acidity and moderate bitterness provide balance. The finish is long and mouth-coating, with lingering warmth.
