Cantillon Fou'Foune
Fou'Foune is Brasserie Cantillon's fruit lambic, built on a foundation of spontaneously fermented lambic infused with French apricots over two months. The brewery, established in 1900, stands as one of Brussels's last surviving traditional lambic producers.
The beer appears lightly hazy with a golden-orange hue. The nose leads with apricot, complemented by subtle sourness and earthy yeast character. On the palate, fresh apricot fruit emerges with moderate tartness and a harmonious balance between the fruit and the lambic's natural acidity.
Despite Cantillon's characteristic sharpness, Fou'Foune drinks with surprising grace and drinkability. The finish is clean and dry, with a light body that suits its modest 5% ABV perfectly.
