Tommie Sjef Olasz is a wild ale from the eponymous Den Helder brewery, where brewer Tommie pursues his passion for spontaneously fermented beers. This beer is a blend of 1, 2 and 3 year old barrels with a minimal amount of Olasz Riesling grapes. The combination of extended barrel aging with his own wild yeast and bacteria culture creates a complex interplay of tartness, fruitiness and vinous notes.
