Kaapse Mark-ari
Mark-Ari is Kaapse Brouwers' first bottle-conditioned wild yeast beer, named after the Roman philosopher Marcus Aurelius to celebrate the birth of the brewery's son. Brewed as a traditional Belgian blonde with Orval yeast, it receives a second fermentation in bottle through the addition of sugar and wild Brettanomyces.
Bottle conditioning allows the beer to develop and gain complexity over time, rewarding patience with increasing depth. An ambitious experiment from the independent Rotterdam brewery, known since 2014 for bold recipes and challenging flavour explorations.
